  1. Cortar en juliana la cebolla y el ajo y pochar en una olla
  2. Disponer en un bowl la carne y añadir en el centro la parte proporcional de la cebolla pochada antes (1/5 parte), añadir el perejil, la sal, la pimienta, el huevo batido y el pan bimbo remojado en leche
  3. Amasar hasta uniformar (si queda muy líquido, añadir pan rallado)
  4. Pelar y cortar zanahoria y freír con aceite. Aquí es recomendable dejar a un lado el resto de cebolla y ajos pochados (en el vaso donde luego se triturará con la zanahoria) y así usar la misma olla para la zanahoria.
  5. Mientras la zanahoria se fríe, hacer bolas de carne y pasar por harina.
  6. Sacar la zanahoria frita, mezclar con la cebolla y triturar.
  7. Freír las albóndigas hasta que doren por fuera. A medida que vayan estando, pasarlas a la olla donde estaba la zanahoria.
  8. A la mezcla de zanahoria, cebolla y ajo triturada, añadir el vino blanco, el tomate frito y el agua hasta que quede puré.
  9. Añadir el puré de salsa española a la bolas, un chorrito de salsa perrins, sal al gusto y la cayena a la olla. La salsa tiene que cubrir 1 dedo más que las albóndigas.
  10. 1h a fuego lento o 20 minutos en olla rápida
  11. Servir y disfrutar con pan o patatas fritas.
