- 200 grs chicharrón (ver receta)
- 300 grs carne picada
- 2 chorizos
- 1 aguacate

- 4 ramas Cebolla de verdeo
- 1 cabeza ajo
- Laurel
- Sal
- Pimienta
- Aceite para freír

- Hidrata los porotos colorados en agua de un día para otro cambiando el agua de 2 a veces, mantener en heladera
- Una vez hidratados, podes colarlos y por er a cocinar en agua limpia agregando sal en la olla de cocción. Cocinar hasta que esté blando.
- Para el chicharrón cortar la panceta en flecos, y cocinar en abundante grasa o manteca hasta que se pongan doraditas. Quitar de la cocción y dejar escurrir el excedente de aceite en papel y reservar.
- Los chorizos primero debemos cocerlos en abundante agua con una hojita de laurel y Sal. Y antes de servirlo debemos dorarlo en plancha, sartén o en horno.
- En un sartén colocamos 1 diente de ajo, cebolla blanca y dejamos dorar. El paso siguiente es agregar la carne y cocer hasta dorar. Recién al final agregamos sal, Pimienta y la parte verdeo del verdeo.
- Al plátano debemos cortarlo en láminas y freírlos en abundante aceite hasta que estén dorados dejamos escurrir en papel de cocina y reservamos para el montaje del plato.
- Hacemos 2 huevos Fritos que estén bien jugosos y los colocamos coronando nuestra bandeja.
- Al momento de ensamblar nuestro plato colocamos cada una de las preparaciones en una bandeja o plato amplio una al lado de la otra. Para finalizar colocamos la Palta cortada en láminas y coronamos la bandeja paisa con los huevos Fritos y los chorizos.

- Se acompaña todo con las arepas y el ahogao.
