  1. Ponemos a remojo la miga de pan en la leche y la deshacemos hasta que forme una pasta.
  2. Batimos un huevo y se lo añadimos, reservamos.
  3. En un bol aparte, ponemos la carne picada, con la sal y la pimienta, añadimos el queso rallado y mezclamos bien. ahora añadimos la masa que hicimos con el pan, y dejamos reposar un rato en la nevera.
  4. Una vez reposada la carne, vamos haciendo bolitas y pasándolas por harina, para posteriormente freírlas en abundante aceite caliente, las freímos un minuto y les damos vuelta. Esperar otro minuto, y reservar.
  5. Mientras se van friendo las albóndigas, podemos ir preparando la salsa; picamos muy fina la cebolla y el ajo y lo ponemos a pochar a fuego lento.
  6. Cortamos las zanahorias en rodajas ni finas ni gordas, y cuando la cebolla empiece a estar blanda, la añadimos que se vaya haciendo también.
  7. Cuando ya esté la verdura hecha, añadimos el vino y esperamos que se evapore el alcohol. Entonces añadimos el caldo de carne en el que habremos diluido la maicena y el azafrán.
  8. Una vez tenemos la salsa preparada añadimos las albóndigas, y lo dejamos que se cocine todo junto durante unos 10 minutos.
  9. Mientras tanto se pueden freír unas patatas como acompañamiento.
