  1. Primero vamos a formar bollitos de carne de unos 120gr aprox, ponemos el bollito entre 2 folex y vamos a aplastarlos con las manos (que queden con 2 cm de grosor). Luego reservar en frío hasta el momento que lo tengamos que utilizar.
  2. Para la panceta, ponemos en un plato 2 servilletas y vamos a poner las fetas (sin encimarlas) y cubrimos con 2 servilletas más. Las mandamos al microondas por 2 min, salen y las damos vueltas, para ponerlas 2 min más. Si no tenés microondas podes hacerla en el horno o en la plancha a fuego bajito. Una vez que están, las pasamos por servilletas para sacar el exceso de líquido y las reservamos.
  3. Para la cebolla crispy, en un bowl cascamos el huevo, condimentamos y batimos, en otro bowl ponemos la harina y reservamos. Cortamos la cebolla en julianna y hacemos un empanado normal (primero pasamos por huevo y luego por la harina). Para la fritura tenemos que sacarle el excedente de harina y cocinamos en aceite bien caliente (180°C/200°C) hasta que estén doraditas. Sacamos del aceite, secamos en servilletas y reservamos.
  4. Para la lactonesa, ponemos la leche y el ajo en un vaso de Minipimer, mixeamos sin levantar el pimmer y una vez que se emulsiono, le tiramos el aceite en forma de hilo (siempre sin dejar de mixear), una vez que tomo la consistencia de una mayonesa, condimentamos y guardamos en el frío.
  5. Para el armado de la hamburguesa, vamos a poner a calentar la plancha hasta que humee, untamos los panes con manteca y los ponemos en la plancha, una vez que doro, los reservamos. Tiramos un poco de manteca en la plancha y colocamos los medallones de carne, condimentas a gusto y dejas que se cocine bien y se le forme una costrita. Cuando la sangre sube, ahí está lista para darla vuelta, una vez que la damos vuelta le agregamos el cheddar y dejamos que se terminé de cocinar.
  6. Una vez que tenemos los medallones listos, pones la base del pan en un pedazo de papel aluminio, untas con el aderezo, agregas el medallón, la panceta y la cebolla crispy, cerras la hamburguesa y envolves con el papel aluminio (a mí me gusta envolverla para que todos los jugos de la carne y el vapor, apelmacen bien la hamburguesa).
